Today’s version of a doorknock dinner. (working with what I had in the pantry) on the fly. It turned out awesome! Not for those watching fat and calories.
6 or so, red potatoes, sliced thinly and parboiled
1 lb of lean ground pork, browned
1/2 white onion, pureed in food processor.
1 tsp poultry seasoning
1/2 tsp salt
2 cups???? Cheddar cheese, grated
3 tbsp butter
3 tbsp flour
2 or so cups of milk. (whole, or 2%. Skim will not work as well)
6 eggs
pinch nutmeg.
3 tbsp Parmesan, grated
Prepare potatoes, parboil, let cool. Grease a lasagna pan with butter. line pan with potatoes.
Brown pork in a skillet, then turn down and add the onion, poultry seasoning and salt. saute for 2 minutes.
pour on top of potato layer. Layer the rest of the potatoes on the meat. (Add about 1/4 of water to this, so that it doesn’t dry out too much when baking)
Grated cheese on the potato layer.
Bechamel.
